Popsicle #35 Peach Mint
(blend up peaches, chopped mint and a smidgeon of maple syrup)
Pretty good. It would have been better with ripe peaches and local mint but that won’t happen for a few weeks.
Popsicle #34 Peanut Butter Chocolate Banana
(banana, cocoa powder, peanut butter, blend)
I’ve been trying to think of good peanut butter recipes and I thought I would try just adding it into my banana chocolate standard. It was ok but it would have worked better with just chocolate and peanut butter with no banana.
Popsicle #33 Pumpkin Pecan Pie
(pumpkin, sweetened condensed milk and candied pecans)
This one combined the pumpkin pie popsicle idea with the peach praline. It was also trying to recreate the pumpkin pecan pie my Aunt Vicky always made for Thanksgiving. I was lazy and decided to try to make the candied pecans in a frying pan over the stove technique. This technique didn’t work nearly as well as the slow baking in the oven and they kinda burned.
Popsicle #32 Rhubarb Kiwi
(slice up rhubarb, put in sauce pan with sugar, cinnamon, and a tiny amount of water cook until soft. Slice up kiwi and put in mold with rhubarb mixture)
Delicious. Great texture and the kiwi made the pops pretty. I’m also allergic to strawberries and this sorta still tasted like them. Definitely worth a repeat. Somehow I forgot to take a photo of this one.
Popsicle #30 Greener More Herbaceous Pineapple Cilantro
(blend one can of pineapple with about ½ cup of cilantro with a tad of maple syrup)
I’ve made these ones before but I used my immersion blender. This time I use my housemate’s blender. Way more intense flavor and they are incredibly green. These are so easy to make that my housemate Lindsay told me that even a monkey could make then. Maybe I shouldn’t share my secret recipes anymore….
Popsicle #29 Chocolate Coconut
(make this recipe and mix in coconut flakes and freeze)
Creamy and great consistency. Although you need to check your teeth for stray coconut flakes but that is what friends are for, right? Vegan and good for my lactose intolerance friends, like Alison who got some of these for her 30th birthday party.
Popsicle # 29 Banana Pudding
(Make this recipe and add more cookies and banana pieces)
As a popsicle maker who spends a good deal of her life in front of a computer, my google search history involves a lot of popsicle recipes. I found this one awhile ago and finally made it. Delicious. Growing up in a crunchy hippie family, we did not eat banana pudding or nilla wafers and the banana pudding I’ve managed to have at friends’ houses always tasted like fake banana. This recipe is a good because it is simple and you can taste the banana without the artificial fakeness. The cookies get soggy, similar to the pudding. I wished they stayed crunchier. Maybe I could add the cookies after the milk starts to freeze a bit. I still have a half of box of cookies left, which means I need to make more popsicles! Lots of folks got to try these including the housemates, Katie, Lindsay #2, Jane, Charlie and a Quaker committee meeting.
Popsicle # 28 Salted Caramel
(make salted caramel sauce, make pudding with milk, corn starch, sugar and vanilla, blend in caramel sauce at the end)
Since I had company, it was time to be impressive. This one got an “Oh, Arin!” reaction from one of it’s eaters, which is something I always like to hear in any context. Good consistency, not too icy and fun complex favors with the sugar/salt/caramel combo. I made the pudding using the slow method of heating it over boiling water. It took a long time but I think may have been worth it in the end.
Jane and Lucia ate these ones. The housemates, Lizzie and Lindsay, got them for dessert after house dinner of shaved asparagus pizza with eggs on top. It has been a fancy week. Lindsay also discovered that the rocket pop mold stick is longer than the star pop mold, thus ultimately leading to the “does size matter?” conversation. (Answer: yes)
